The best Gluten Free Pumpkin Omega 3 Waffles

During the fall Months when pumpkins start showing up at the markets this time of year, Pumpkin Waffles are a perfect treat!


Pumpkins are packed with impressive nutrition and health benefits. They are Highly Nutritious and Particularly Rich in Fiber, which improves digestion. Pumpkin's brilliant orange coloring comes from its ample supply of beta-carotene, which is converted to vitamin A in the body which has a High Antioxidant capacity and may reduce your risk of chronic diseases. The fiber, potassium, and vitamin C content in pumpkin all support heart health. Packed full of Vitamin C help boost better immunity. Vitamin A, Lutein and Zeaxanthin may even protect your vision. All great reasons for consuming Pumpkin in Meals.




  • 1 1 c. Gluten Free Pancake Mix (Bob’s Red Mill)

  • 1 Can Organic Pumpkin from Trader Joes

  • 2 eggs

  • 1/2 Cup Organic Coconut Milk

  • 1 Diced Peeled Organic Gala Apple

  • 1 Tbsp. Ground Flax Seed

  • 1 Tbsp. Chia Seeds

  • 1 Tbsp. Hemp Seeds

  • 1 Tsp. Vanilla

  • 1 Tsp. Cinnamon

  • 1 Tbsp. Liquid Coconut Oil


  1. Combine and mix wet ingredients in a bowl 

  2. Whisk in dry ingredients carefully to avoid clumping

  3. Stir in apples

  4. Heat Griddle to medium, Spray Coconut Oil on Waffle Griddle

  5. Pour badder into waffle iron cook until golden and slightly crisp

  6. Serve warm with Vegan Butter or Grass Fed Butter, Organic Pumpkin Butter and Pure Maple Syrup
