ORGANIC CHICKEN, TURKEY or BEEF BONE BROTH ASIAN STYLE

4 pounds chicken or turkey necks/feet/wings or left-over bones from a roasted whole Chicken or Turkey or Beef bones from a grass-fed cow.
3 large carrots, chopped in to large 2” chunks
3 celery stalks, chopped in to large 2” chunks
2 medium onions, quartered
4 garlic cloves and smashed
1 teaspoon Himalayan salt
1 teaspoon whole peppercorns
¼ cup organic apple cider vinegar
1 thumb of sliced ginger
2 limes cut in half
1 stalk of lemon grass cut in half
3 star-anise3-4 sprigs each of fresh thyme, parsley and rosemary, oregano
2 bay leaves
18–20 cups cold water
Place all ingredients in a 10-quart capacity slow cooker or pot on the stove.Add in filtered water.Simmer for 24 to 48 hours, skimming fat occasionally. Remove from heat and allow to cool slightly. Discard solids and strain remainder in a bowl through a colander. Let stock cool to room temperature, cover and chill. Use within a week or freeze up to three months.
